Chocolate Mint Cookies

Melt 3/4 cup butter on low heat.
Add:
2 Tablespoons water
1/2 cup brown sugar
2 cups chocolate chips

Remove from heat and cool for 10 minutes.
Add:
2 beaten eggs
1 1/4 teaspoon baking soda
2 1/2 cups flour
1/2 teaspoon salt

Chill dough for 45 minutes.
Roll into small balls. (Makes about 50)
Bake @ 350 for 10 minutes.

Break Andes Mints in to half and place one on each warm cookie. Once they are melted, smear them around the top of the cookie. Then grab the milk and...Enjoy!
(This recipe is one of my favorite recipes from Cindy Clyde)
